Born on the clay-limestone soils of Cotignac, Le Vent dans les Voiles Blanc expresses the bright, vibrant freshness of Vermentino, an emblematic grape variety of the South.
Vines over 40 years old are farmed with deep respect for the living ecosystem.
Vinification is carried out on a parcel-by-parcel basis, with direct pressing of whole, uncrushed grapes to preserve the integrity of the fruit.
Fermentation takes place with indigenous yeasts in small concrete tanks, followed by ageing on fine lees to bring texture, brightness and precision.
Pale yellow color, clear and bright.
Fresh citrus notes (lemon, grapefruit) with delicate floral nuances.
Lively attack with fine tension; flavors of lime and white peach. Long, elegant finish, subtly saline, supported by delicate minerality.
