AOP Cahors

100 % Malbec – Vines aged 40 to 50 years

Bio et Demeter

Terroir

This single-parcel cuvée originates on the Cahors plateaus, where swelling red clays mixed with gravel rest on a friable Jurassic limestone bedrock.

A vibrant terroir that gives Malbec a subtle, deep and airy expression.

The vineyard is cultivated in total respect for the living world : measured interventions, careful observation of natural rhythms, and preservation of soil vitality.

Harvesting is carried out by hand.

Vinification and Aging

Vinification is carried out parcel by parcel in small concrete vats, with a constant focus on preserving the integrity of the fruit. The grapes are mostly destemmed but not crushed, ferment with indigenous yeasts, and undergo gentle extractions combining light punch-downs and carefully controlled pump-overs.

Maceration lasts between 15 and 20 days.

Aging continues for 15 months in concrete vats and in barrels of one, two and three wines, preserving the freshness of the fruit while adding depth and dimension, without ever overpowering the wine.

No fining or filtration is performed, in order to maintain the pure identity of the Malbec.

Appearance

Deep black color with purple highlights.

Nose

Floral and delicately spiced, marked by violet notes.

Palate

Smooth and fleshy, with a velvety texture and a long, harmonious finish, perfectly balanced.

A precise, elegant, and supple Cahors wine, where structure meets a distinctive floral elegance.
