Terroir

This cuvée comes from vines over 40 years old, planted on the lacustrine limestone marls of the Quercy hills. Zinzolin delivers an intense and generous expression of the fruit.

The vineyard is cultivated with deep respect for the living ecosystem, certified organic and biodynamic. Interventions are measured, and the natural balances are carefully preserved.

Vinification and Aging

The winemaking is carried out parcel by parcel in small concrete vats. The grapes are destemmed but not crushed, ferment naturally with indigenous yeasts, with gentle extractions combining light punch-downs and precise pump-overs. Maceration lasts 9 to 15 days depending on the grape variety.

Aging continues for 12 months in concrete vats and stoneware jars.

No fining or filtration is applied, preserving the pure expression of the fruit.

Appearance

Deep, dark black with purple highlights.

Nose

Intense and succulent : blackcurrant, blueberry, sloe, with hints of licorice and floral notes (peony, violet).

Palate

Juicy and fleshy yet supple, fruit-focused, with a generous finish (cocoa, light licorice) and excellent drinkability.

A juicy, generous and approachable red, combining immediate pleasure, freshness and finesse of extraction.
